Why do we need wine aging in oak.
No other methods have allowed to obtain the same result as the storage of wine in oak. And that's why: when the drink is aged in a barrel, chemical processes begin that affect organic acids and change the taste, bouquet and color of the wine.

But evaporation should not be excessive and it needs to be controlled, because the free space is occupied by air. Because of this, the wine can oxidize and deteriorate.
However, it is worth noting that controlled aeration when storing wine in a barrel also has its advantages. In small doses, penetrating through the pores of wood and special holes, oxygen has a positive effect on the quality of the drink. For example:
Tannins become softer, and as a result, the wine turns out to be less tart;
Red drinks will have a richer color, and white ones will become brighter and acquire a golden hue.;
Excessive acidity goes away.
Thus, aging in a barrel can make the wine more balanced, rich and interesting. But, note that not all wines need this process.
